Beef Curry

Ingredients
- 1/2 med Onion
- 1 tbsp oil
- 1/3 Lb cubed beef
- 2 tbsp hot curry paste
- 1/2 cup diced canned tomatoes
- 1/2 cup water
- 1/2 cup rice
Directions
- Chop onions into 1” cubes
- Chop cubed beef into1” pieces
- Saute onion in oil
- Add beef and cook until lightly browned
- Reduce heat to medium and stir in hot curry paste, stir until well mixed
- Add tomatoes and water, increase heat to high.
- When boiling reduce heat to medium and simmer uncovered, about 10-15 minutes until beef is fully cooked and sauce has thickened.
- While curry is cooking, cook rice according to directions (amount of water varies by type of rice)
- Serve curry over hot rice
