Vindaloo Chicken with Rice

Ingredients
- 2 tbsp Vindaloo Paste
- 1 tbsp oil
- 1 1/ 2 tbsp vinegar
- 1/4 chopped onion
- 1 chicken breast
- 1/4 tsp salt
- 1/4 cup water
- 1/3 cup Jasmine Rice
- 1 tbsp vindaloo spice mix
- 1 tbsp water
- 1 tbsp oil
Vindaloo Paste
Directions
- Make the vindaloo paste by mixing the spice mix, water and oil and set aside.
- Chop onion and set aside.
- Chop the chicken into 1” chunks and set aside.
- Heat 1 tbsp oil in the wok, when hot brown the chicken.
- Add and brown the chopped onion.
- Add vindaloo paste, vinegar, salt and water. Reduce heat and simmer.
- Prepare 1/3 cup rice.
- When the sauce has thickened, serve with the rice.
Sources
Try making this with Aloo Phujia to serve 2-3 instead of doubling the recipe. Or you can add potatoes to the Vindaloo and double the amount of Vindaloo paste, water and vinegar in the recipe.
