Creamy Dal

Ingredients
- 1 tbsp Olive Oil
- 1/2 medium Onion
- 1/4 tsp Chili Powder
- 1 tsp Ginger
- 1/2 tsp Garlic
- 1 cup diced Tomatoes
- 1/3 cup Lentils
- 1/4 cup canned Kidney Beans
- 3/4 cup Water
- 1/2 cup Coconut Milk
Directions
- Heat 1 tbsp Olive Oil in a heavy pot of dutch oven.
- Sautee the onion and garlic until softened
- Add remaining ingredients and simmer covered 20 minutes.
- Remove cover and simmer an additional 15 minutes until liquid has evaporated and lentils are cooked.
